Still, after all these year. I find myself cooking for the masses rather than for the two of us. While we were traveling in the RV it just meant eating the same thing over and over until it was gone (because our freezer was the size of a cigar box). Now I find myself doing things just to see if they'll work or not because I can't stand to throw good food (or at least some's good) away. A couple of months ago I made wayyyy too many mashed potatoes (not possible when my boys lived with us) but for Jim and I it was wayyyy too many (I peeled a 5# sack of Idaho's). Well they had butter & milk in them and somewhere I heard that dairy doesn't freeze well. But I decided to try something. After two meals with mashed potatoes (and we're suppost to be dieting) I decided to make the left over mashed potatoes into patties and freeze them individually. Well, like I said that was a couple of months ago and I forgot about them because we have two freezers now and things tend to get pushed to the back. I was cleaning out the inhouse freezer to make room for cookie dough balls I have been freezing so that we only eat two cookies and they have to have time to cook which helps keep our intake lower. Long story short..I came across the potato patties so I decided to cook up a few to see if they tasted like freezer burn or were ok. THEY WERE YUMMY according to Jim. So just thought I'd share.
I've been following a wonderful blogger who goes by the name Modern Honey. She's the daughter of one of my special college "roomies" from I don't care to say how far back. Anyway she's the "cookie queen" in our home and in order to keep from eating the whole batch when there's just the two of us I got out our mini muffin tins and roll balls of fresh cookie dough up and put in each individual muffin holder, place in the freezer and then when they have frozen I pull them out and place in a labeled zip lock freezer bag. This way I only take out a couple each for my hubby and I and cook just those up, thereby keeping our intake under control.
